Smashed Red Potatoes



I’m not sure why I’m just now posting this recipe because it’s so easy and a great dish for any time.
I usually only make it at holidays to keep it something special and different that we don’t always eat. 

Ingredients:

1 bag of organic red potatoes
Salt
Green onion to garnish 

Directions:

Boil potatoes until soft.
Drain and place on a baking sheet sprayed with Primal Kitchen avocado oil.
Smash one end of each potato. 
Sprinkle salt
Bake on 400 until lightly brown.
Let cool some and then add the cream cheese and green onions.

Easy peasy!
