Happy 2021!! This is my first recipe of the year to share, and I'm so excited to bring you healthy food ideas all year long!
I'm excited about this recipe because I love tofu but never had much luck cooking with it before. I gave up trying to cook it a long time ago, but my man got me an air fryer for Christmas, and I somehow I nailed cooking tofu in it the first time!
On top of nailing the tofu, I also created a delicious peanut sauce made with Wild Friends peanut butter. I typically don't eat or have peanuts on hand, but my middle dude had some leftover from our recent beach trip, so I sprinkled them on top for a little crunch (but don't feel like you need to add the peanuts).
Also, if you don't have an air fryer, you can totally cook the tofu in a skillet. The key to cooking tofu is (1) make sure you buy extra firm tofu and (2) make sure to drain the water out.
To drain the water, get a plate and cover with some paper towels. Lay the tofu block on top of the paper towels. Lay more paper towels on top of the tofu block and then place a plate on top of the paper towels. Set a heavy can on top of the plate for extra weight. I let mine sit like this for about 4 hours but 1 hour should be fine.
Cooking the tofu in the air fryer:
1. Cut the drained tofu into small 2 inch pieces
2. Turn the air fryer on 380°
3. Toss tofu pieces in 2 tsp cornstarch
4. Spray tofu with avocado spray
5. Mix spices: 1 tsp smoked paprika, 1/2 tsp sea salt, 1 tsp garlic powder, 1 tsp onion powder
6. Mix the tofu in the spices
7. Place tofu in the basket of the air fryer. Cook for about 15 min shaking the basket occasionally.
While the tofu is cooking you can make the peanut sauce--Only 5 Ingredients!
2 tbsp Wild Friends peanut butter
1 tbsp maple syrup
1 tsp tumeric
1 tsp apple cider vinegar
Add water depending on how thick or runny you want it.
Put all ingredients in a food processor or blender and blend well.
I roasted broccoli on 400° with just some avocado oil and sea salt for about 20 min and steamed some Jasmine rice.
Once the tofu is done, plate your rice, put your broccoli and tofu on top, and then add your sauce! Top with sesame seeds and peanuts if you choose.
