RECIPE: Mexican Casserole

Yep, it's another Mexican dish. I can't help it! I was raised on it!💁🏼‍♀️

Growing up, my mom made a Mexican casserole with chips, tons of cheese and chicken. I wanted to recreate something similar, but without the cheese, chips, and chicken.😬

This was a winner with my boys, and well, winners usually get posted on the blog. It's super easy and GF/DF.

1 package of any Siete tortillas

2 cans of organic black beans rinsed

Violife vegan grated cheese

1 red pepper chopped

1 green pepper chopped

1.5 tsp cumin

1 tsp salt

Mateo's gourmet salsa

Chives chopped

Green Valley organic DF sour cream

1 white onion chopped

4 garlic clove minced 

4 tbsp Chosen Foods avocado oil 



  1. Preheat oven to 400°
  2. In a 9x13 dish, pour in salsa to lightly cover the bottom
  3. Lay half of the tortilla strips on top of the salsa slightly overlapping each other
  4. In an iron skillet, heat oil and add onion, garlic, peppers, and spices, cooking and stirring occasionally for 5 min
  5. Add the beans, and mix the ingredients together
  6. Put half of the veggie mixture on top of the tortillas 
  7. Repeat the layering steps with salsa, tortillas, and the rest of veggie mixture
  8. Top with vegan cheese
  9. Cover the dish with parchment paper and cook for 15 min
  10. Remove parchment paper and cook another 5 min
  11. Let cool for 5 min
  12. Serve and top with chives and sour cream
