Yep, it's another Mexican dish. I can't help it! I was raised on it!💁🏼♀️
Growing up, my mom made a Mexican casserole with chips, tons of cheese and chicken. I wanted to recreate something similar, but without the cheese, chips, and chicken.😬
This was a winner with my boys, and well, winners usually get posted on the blog. It's super easy and GF/DF.

Ingredients:
1 package of any Siete tortillas
2 cans of organic black beans rinsed
1 red pepper chopped
1 green pepper chopped
1.5 tsp cumin
1 tsp salt
Chives chopped
Green Valley organic DF sour cream
1 white onion chopped
4 garlic clove minced
4 tbsp Chosen Foods avocado oil
Directions:
- Preheat oven to 400°
- In a 9x13 dish, pour in salsa to lightly cover the bottom
- Lay half of the tortilla strips on top of the salsa slightly overlapping each other
- In an iron skillet, heat oil and add onion, garlic, peppers, and spices, cooking and stirring occasionally for 5 min
- Add the beans, and mix the ingredients together
- Put half of the veggie mixture on top of the tortillas
- Repeat the layering steps with salsa, tortillas, and the rest of veggie mixture
- Top with vegan cheese
- Cover the dish with parchment paper and cook for 15 min
- Remove parchment paper and cook another 5 min
- Let cool for 5 min
- Serve and top with chives and sour cream
